finally, a success story switching it up from the normal recipes. let it be known i am a versatile woman.
LEMON CURD
ok this took way to long so buy it next time instead. but if not, use this recipe:
ingredients:
- 3 lemons
- 1 1/2 cups sugar
- 1/4 pound unsalted butter
- 4 eggs
- 1/2 cup lemon juice (3 to 4 lemons)
- salt
STEPS:
- zest 3 lemons and try not to slice finger using dull kitchen knife 🙂
- chop zest into small pieces (as fine as you can manage)
- juice the 3 lemons (about 1/2 cup but more or less)
- mix sugar and zest together
- cream the butter, and add in zest + sugar mix
- then add in the eggs, lemon juice and salt
- try (unsuccessfully) not to panic that it curdled when you mixed it all together
- pour into saucepan and cook over low(ish) heat ***ok so you don’t want to make this weird lemon scrambled eggs, so keep it low, but not too low bc you need the butter to melt so its not curdled anymore… so about a 4 on the stovetop scale)
- constantly whisk and be mad at yourself you don’t do arms more because after 25ish minutes you get tired
- keep whisking another 15 minutes because its not thick enough
- cool off for a bit, get annoyed its still not thick enough, put back on heat and whisk some more
- watch criminal minds while doing so, despite spooky dreams you keep having
- ok actually take off heat and let cool overnight, it finally thickened sos
- eat with spoon
THE BUN PART OF LEMON BUNS
ingredients
- 490g flour (divided)
- 7/8g yeast (if its the kind you keep in the fridge)
- 50g sugar
- salt
- 1 cup milk
- 56g butter
- 1 egg
STEPS:
- make bread like you normally would
- let rise for an hour ish?
- roll dough into rectangle and spread curd, leaving an inch on the edges
- fold in half and seal edges
- with sharpish knife cut strips from dough trying not to let all the filling out
- give them a little fun twist and make into a circle contraption of sorts
- place on baking sheets
- heat oven to 350 and cook for 30minutes – until golden brown
