strawberry cheesecake cookies

for girls night. or literally any other night. pairs well with wine.

for cookie part

  • 210 g butter softened
  • 150 g white sugar
  • 50 g brown sugar
  • 1 egg + 1 egg yolk
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • ¼ teaspoon pink salt because thats what we’re currently working with and piggly wiggly is now closed (rip) so i can’t get normal salt
  • 343 g all-purpose flour
  • ½-⅔ cup fresh strawberries, diced into smol pieces

for filling

  • 170 g cream cheese
  • 30 g powdered sugar

steps

  1. make cookie dough as usual
  2. put strawberries in flour mixture before adding to butter so they’re not as wet from the start
  3. for cream cheese filling, use two spoons and make teaspoon-ish balls and fully freeze
  4. chill dough and make into balls – push frozen cream cheese into center of dough
  5. will be sticky but don’t add more flour, because we don’t need dry ass cookies
  6. put back into the fridge so they’re chilled again while oven is pre-heating to 350 degrees
  7. bake for 15ish minutes
