Its Bagels Bitch

not me re-writing a bagel recipe because the original one was dumb and confusing.

Ingredients

  • 2 teaspoons dry yeast
  • 4 ½ teaspoons granulated sugar
  • 1 ¼ cups warm water
  • 3 ½ cups bread flour + more for kneading
  • 1 ½ teaspoons salt
  • toppings – literally whatever you want. sesame seeds always hit though.
  1. in half cup of water, mix in yeast and sugar. let sit for 5 minutes without stirring. after 5 minutes stir to dissolve.
  2. mix flour and salt together in bowl. add in yeast mixture to this bowl.
  3. continue to add remaining water. (a little less than a cup, but more if needed).
  4. on a floured surface, knead the dough for 10ish minutes. until it feels like what it’s supposed to feel like.
  5. put ball of dough in an oiled bowl, and let prove (proof??) for 1.5hour ish (approximately the length of a painful zoom uni property law class.)
  6. utilize scale for best results, and form into 10 pieces.
  7. make into bagel shapes.
  8. bring large pot of water to a boil – add in a few bagels at a time, and each side 2 minutes. (fun fact montreal bagels are basically this but you boil them in water w honey!!)
  9. take out of water, sploosh on whatever toppings your heart desires and let cool for 10 minutes covered
  10. bake for 20 minutes at 425.
