not me re-writing a bagel recipe because the original one was dumb and confusing.
Ingredients
- 2 teaspoons dry yeast
- 4 ½ teaspoons granulated sugar
- 1 ¼ cups warm water
- 3 ½ cups bread flour + more for kneading
- 1 ½ teaspoons salt
- toppings – literally whatever you want. sesame seeds always hit though.
- in half cup of water, mix in yeast and sugar. let sit for 5 minutes without stirring. after 5 minutes stir to dissolve.
- mix flour and salt together in bowl. add in yeast mixture to this bowl.
- continue to add remaining water. (a little less than a cup, but more if needed).
- on a floured surface, knead the dough for 10ish minutes. until it feels like what it’s supposed to feel like.
- put ball of dough in an oiled bowl, and let prove (proof??) for 1.5hour ish (approximately the length of a painful zoom uni property law class.)
- utilize scale for best results, and form into 10 pieces.
- make into bagel shapes.
- bring large pot of water to a boil – add in a few bagels at a time, and each side 2 minutes. (fun fact montreal bagels are basically this but you boil them in water w honey!!)
- take out of water, sploosh on whatever toppings your heart desires and let cool for 10 minutes covered
- bake for 20 minutes at 425.
